Cooking with Chet - Italian Style Zucchini Casserole - This quick and easy vegetable dish was one of my wife’s favorites, she made it often for our family and dinners guests, usually served as a side dish to meat or chicken. You can prepare this dish a day or two before serving and then reheat and add the cheese when you are ready to serve.
If there are any leftovers, you can be sure this is also very good served on top of pasta!

Ingredients:
6 Zucchini
Olive oil to sauté
1 Sweet Onion
1 Clove Garlic
2 cans diced or stewed Tomatoes
Handful each of fresh parsley and basil
Salt, pepper and red pepper to taste
1-2 cups grated Italian cheese such as Pecorino Romano
Preparation:
Sauté the onions and garlic in olive oil in a good size pot.
When the onions become translucent and garlic is soft add the zucchini and let it stew down a bit. This may take 10-15 minutes.
Don’t let the zucchini get over cooked or mushy.
Add the tomatoes and seasoning and let it cook more.
If you are making ahead of time, stop here and refrigerate.
When you are ready to serve, heat through and add the cheese, stir well so the cheese melts.
