Italian Frittata

Cooking with Chet - A Frittata is an Italian egg dish that is much like an omelet. In this episode, my great granddaughter, Mia joins me An omelet typically is folded over with ingredients inside the fold, while in a Frittata the eggs are cooked with the stuffing. When cooking a large Frittata you can begin your preparation on the stove and then finish it off in the oven under the broiler. I always like to include some sautéed sweet onions and cheese and then let your imagination and whatever on hand to take you to the next steps. Some vegetables like zucchini, mushrooms, asparagus, broccoli, potatoes, spinach are all delicious. Ham, sausage or chorizo is yummy as well.

Ingredients:

  • Eggs
  • Bell Peppers
  • Cheese
  • Zucchini
  • Potatoes
  • Mushrooms
  • Tomatoes
  • Onion
  • Olive Oil

Preparation:

  1. Heat Potatoes in Microwave for 2 minutes
  2. Slice Onions in half-circles
  3. Put Both in a fry pan to sauté on the stove in 2 Tablespoons of Olive Oil for two to three minutes. 
  4. Slice Zucchini add to the fry pan
  5. Slice Roasted Red Bell Peppers and Mushrooms and add to to the fry pan
  6. Slice small Tomatoes into circles and add on top of the fry pan ingredients
  7. Grate some Cheese over the top
  8. Add mixed Eggs over the top, do not stir, let the eggs cook for two to three minutes.
  9. Slide Frittata onto a plate and serve
