Cucuzza Longa Stew

Cooking with Chet - Cucuzza Longa Stew or Squash Stew is a lamb stew with vegetables which features Kobucha long or Italian squash. Its a really nice dinner with a lot of lamb, squash, carrots, onions and potatoes and it smells very good. Here I will show you how to cut the squash and get it prepared before we start to braise the lamb shank.

Ingredients:

  • Seasoned Lamb Shank
  • 1 Teaspoon Rosemary
  • 1 Teaspoon Salt
  • 1/2 Teason Pepper
  • 2 Tablespoons Oregano
  • 1 Cucuzza Longa
  • 3 (28oz) Cans of whole peeled tomatoes
  • 2 Cups Onion
  • 2 Cups Carrots
  • 2 Cups Potatoes
  • 1 Cup of Red Wine
  • 3 Garlic Cloves

Preparation:

  1. Heat olive oil in a pot
  2. Braise the seasoned lamb
  3. Once browned remove from the pot and set aside
  4. Brown the garlic in the pot and add onions
  5. Once the onions have softened add the lamb back to the pot
  6. Put the tomatoes in a blender to break them down and then add to the pot
  7. Add the wine and the rest of the vegetables except the Cucuzza
  8. Salt and pepper
  9. Cook for about an 45 minutes to an hour + lamb should be getting tender
  10. Then add the Cucuzza
  11. Cook for about another hour
  12. To prepare the Cucuzza:
  13. Trim the ends off the Cucuzza and cut in half so it easier to handle
  14. Peel the Cucuzza with a potato peeler then slice in half, length wise
  15. Run a spoon down the middle to remove the seeds
  16. Then chop in medium size pieces
  17. Salute!
