Cooking with Chet! - Salsa di Pomodori Ciliegini - Pasta with a Cherry Tomato Sauce.
Last summer while in Lucca, Italy I spent an afternoon with Chef Palo Monti taking a cooking class and learning some new recipes.
This is one of my favorites, I’ve made it several times for friends and family, I think it could easily become a favorite of yours as well.
There is a lot of sweetness packed in little cherry tomatoes and if you happen to grow them in your garden, all the better!

Ingredients:
1lb of pasta (spaghetti works well for this)
2lbs of cherry tomatoes (sliced in half)
1 bunch of basil
1-2 cloves of garlic Olive oil (1/2 cup)
Parmesan Reggiano cheese (or your favorite grating cheese)
Preparation:
Sauté smashed garlic in olive oil with the cherry tomatoes that have been sliced.
Cover and let simmer for about 15 minutes, be sure to stir frequently
While the sauce is coming together boil a pot of salted water
Add pasta to the water and cook al Dente
Once the pasta is cooked and the sauce is ready add the pasta to the pan mixing well to combine all the flavors
Remove from heat now and stir in cheese to your liking, or serve freshly grated cheese on the side
